Here at the farm our sap is collected from the trees using tubing and a vacuum system to make sure it is fresh and clean. The sap is then boiled on a 2.5x8 wood fired evaporator where we monitor the temperature and density to ensure we create the highest quality syrup. Once the syrup is ready to draw off the evaporator it is collected and then bottled at the end of the day. We are currently running a little over 750 taps and are excited to be expanding. Sap is boiled daily to give you nothing but the best maple syrup.
From mid-February to mid-March you will find us in our beautiful traditional New England sugar house. Trees were cut and milled on our property to make a traditional timer frame. The joinery was cut by hand and assembled by 3 generations. In this picture you can see the 3 men responsible for the majority of work that went into building this structure.
